Ingredients
• 1 cup toasted coconuts
• 2½ cups flour
• 1 tablespoon of baking powder
• ½ cup sugar
• 1 teaspoon salt
• 1 stick of cold butter
• 1 cup of buttermilk
Directions
Mix all the dry ingredients together till incorporated, then add your stick of very cold butter into the flour and mix with a pastry cutter till the butter gets to the size of small pebbles. Make a well in the center of your mixing bowl and ingredients and pour in the cup of buttermilk and mix with a fork till the ingredients start to form a dough/ball consistency.
Bring your dough out on a lightly floured surface and roll it out into a rectangular shape and then fold it like a book, and repeat that 2 more times. Then form your dough into a circle shape and cut into triangles (I like to cut into 8 triangles). Place on a baking sheet lined with parchment paper and bake at 350 for 18 minutes.
