When you trudge through the rain for five blocks and soak your jeans to the knees just to try a new bar down the road, you deserve a pretty fantastic cocktail as a reward. Lucky for me, that’s exactly what I got on my first trip to Missouri Spirits (507 W. Walnut St., Springfield, missourispirits.com). I stopped by the bar with friends during a Friday night out, and we hunkered down on a big wooden table in the expansive, high-ceilinged bar to take in the menu. Cocktails are made with Missouri Spirits locally made liquors and infused with flavors you don’t see on every drink menu in town. I opted for the Ead’s Elephant, which is made with vodka, grapefruit juice, rosemary simple syrup and blueberry caviar. I loved that the drink had a fruity hint without being too sweet, and the rosemary simple syrup added a touch of sophistication and herbal appeal. Every now and then I’d get a sip with a little nibble of blueberry caviar, which was like a surprise treat every time. Each of my friends ordered a different drink, but the Ead’s Elephant was the star of the table, and I shared many sips with my green-eyed buds.
