A running joke among my friends is identifying what they call “Claire Drinks”—herbal, botanical, tart or bitter, usually green, usually involving some sort of juiced vegetable. Intense, I know, but I like what I like. I’m always searching for new cocktails involving earthy, herbal flavors, which is why the Endless Midsommar at Scotch & Soda (310 South Ave., Springfield, 417-719-4224) immediately caught my eye as a “Claire Drink.” Its base is aquavit, a Scandinavian spirit typically distilled with caraway, cardamom, cumin, anise or fennel, and Genepy des Alpes, a wormwood-infused liqueur hailing from the Alpine region. Combined with Amaro di Angostura, lime and a hint of cinnamon, this drink is a taste of fresh, crisp alpine air that would be perfect for sipping après ski.
